Chicken Stir-Fry For When You Need Dinner On The Table Right Now

Every once in a while, I have one of those days where time gets away from me, and suddenly itโ€™s dinnertime. Generally, this means my kids are hovering in or around the kitchen, whining/asking about whatโ€™s for dinner, and Iโ€™m already frazzled enough as it is! In order to placate my hungry boys and save my own sanity, I often just end up ordering pizza. (On a related note, did you know that Dominoโ€™s offers a gluten-free pizza crust? My son LOVES it. But back to business!)

Of course we would all love to have dinner ideas at our finger tips that are simple, take 5 minutes to make, and are healthier than a frozen meal or takeout. It sounds like a tall order, but I found a recipe recently for Chicken Stir-fry that really does satisfy all of those requirements! We tried whipping it up the other day, and we were all VERY pleasantly surprised at the results! It was quick, simple, and delicious. Iโ€™ll definitely be keeping this recipe in my back pocket for my next dinnertime emergency!

Shortcut Chicken Stir-Fry

5-Minute Chicken Stir-Fry

  • Shredded chicken
  • Bagged coleslaw mix
  • 1/3 cup stir-fry sauce

Be careful not to blink, or you might miss these instructions! ;-)

Shortcut Chicken Stir-Fry

Add a tablespoon of oil to a saute pan over medium-high heat. When the oil is hot, add the contents of the bag of coleslaw mix to the pan, and saute for about 3 minutes.

Then add your desired amount of shredded chicken to the pan. You can make and shred some chicken breasts for this, or use a rotisserie chicken. There are no rules here! (CLICK HERE for the world’s easiest way to shred chicken!)

Cook the slaw veggies and the chicken together until the chicken is heated through.

Pour 1/3 cup of stir-fry sauce into the pan, and toss to ensure everything is evenly coated.

Serve warm, and enjoy!

Now obviously this recipe is pared down to the absolute basics, but there are plenty of ways to can dress it up a bit if youโ€™d like. You can serve this mixture over rice or stir-fry noodles to stretch it for more people, or to make it more filling.

You could also throw some fresh veggies into the pan for a couple of minutes before adding the slaw mix, like peas, mushrooms, onions, etc. The only limit is your imagination! :-)

  1. I made this last night and my husband loved it, said to double the coleslaw for more veggies. And it’s healthy too, I believe you could use any sauce not just stir fry and it would still be good. So easy, thank you!

  3. I’m awful for leaving cooking until i’m so hungry my cats food almost looks appetising and ending up ordering pizza too, i’m definitely going to be giving this a go on one of those days!

  6. Omelettes are our go to meal. Using bits and pieces of vegetables or meat makes it very easy and usually healthy.

  7. Really sounds good… I use the same ingredients (just a touch of soy sauce and ginger in place of the stir fry sauce) and then use it to fill won ton/egg roll wrappers and quick as a wink you have homemade egg rolls.

  8. We have 2 super quick meals that are easy. Quesadillas- we try the tortillas in the pan with oil, add a little sour cream, grated cheese. Then you fold them over while frying. We use a spatula to hold in place while grilling. Then add other toppings when finished cooking.
    The other one is fast version of Chili. We use 1 can of the Hormel chili and 1 can of the diced tomatoes and heat until warm. These are super quick and easy meals.

    • Costco has a bag of shredded rotisserie breast meat in their meat section. It’s a pretty big bag and would be at least two meals worth depending on how many people you have to feed.

  10. I always freeze the leftover rotisserie chicken from Costco. That would be perfect to pull out a bag and make this chicken stirfry I like the idea of adding in a few snow peas, may be a couple little broccoli florettes thanks for sharing

  12. I would use Taylor Farms Chopped Asian Salad. Great flavors and “crunches” to boot.

  13. When I need a super quick dinner:
    Cook noodles ( I prefer farfalle or diavolini)
    Add: Sweet corn+peas+tuna+carrots (optional).

    Mix everything and finalize with olive oil+ oregano.

    Delicious!

  14. Canned chicken works great for these kind of recipes. It is already cooked, shreds with a fork in seconds and the flavorful stir fry sauce masks any of the weird can taste if that is an issue for you. Thank you, Jillee, for your great ideas!
